Speedy Meat

This is a quick ground meat dish. It’s not flashy, but it gets the job done by making the pain in your stomach go away.

Ingredients:

  • 1 lb grass fed ground beef or other lean ground meat
  • 1-2 Tbsp coconut oil
  • 1 ½ tsp chili powder
  • ¼ tsp cayenne pepper
  • 1 tsp garlic powder
  • Sea salt to taste
  • Ground black pepper to taste
  • ½ cup chopped fresh cilantro
    (Tip: To save time, chop and freeze cilantro in baggies in advance.)
  • Juice from 1 juicy lime
  • 1 Tbsp coconut flour
  • Tomato salsa

On the stove over medium heat, allow the coconut oil to liquefy and get hot. Add the ground meat, breaking it up into chunks about 1 inch in diameter. While the meat starts to cook, add the dry spices. Stir and turn the chunks of meat a few times until the meat is just about done. Now add the cilantro, the lime juice, and the coconut flour and toss until the mixture is hot. Serve topped with tomato salsa.
